TASTY VERMICELLI PASTA

POTATO VERMICELLI CUTLETS


In pan boil potatoes for 10 minutes. In another saucepan add uncooked roasted vermicelli. Mix it well and cook for 4 minutes on medium flame till it gets tender. Drain and set aside. After boiling potatoes, mashed them. Now add grated carrot, chopped coriander leaves, chopped green chilly, grated ginger, Gram masala, cumin powder, salt, chilly powder and add bread crumbs for binding the cutlets. Now add roasted peanut powder, cooked roasted vermicelli, lemon juice and mix everything together until well combined. You can grease the palm with oil to avoid sticking and make cutlets of different shape but I make circle cutlets. Cutlets are ready to fry. Prepare rest of the potato vermicelli cutlets in the same way. Fry cutlets into the deep oil so that they do not overlap with each other. This would take about 5 minutes. Put cutlets on the plate. Sprinkle chopped green onions. Serve with ketchup and mayonnaise.

VERMICELLI WITH FRESH VEGETABLE PASTA

Cook vermicelli in a large saucepan. Cook for 10-15 minutes. Drain and set aside. In a bowl add cooked vermicelli, chopped green pepper, chopped red pepper, chopped onions, chopped carrot, shredded chicken, salt, pepper, vinegar, bar BQ sauce and mix well. Refrigerate for 1 hour until cold.

DRY VERMICELLI

First break the Bhattai vermicelli in half and in a saucepan add ghee, sugar, cardamom, rose water and heat quickly, add Bhattai vermicelli and cook for 20 minutes until it becomes cooked and almost dry. Taste and add sugar and green cardamoms if it is needed.  Pour dry vermicelli into the plate. Garnish with almonds. Ready to serve hot.

ROASTED VERMICELLI IN COCONUT MILK

In a boiling water add salt, uncooked vermicelli and cooked vermicelli for 10-15 minutes. When the few waters left, remove the pan from heat and add coconut milk, sugar and stir quickly. Pour vermicelli into the bowl and add cardamoms and pistachios. Ready to serve hot.
